Mote with "Huesillo" a drink from Chile that will blow your mind

Huesillo
Chile is a lovely country with a cold and hot weather throughout the year. For all the variations they have hot and cold drinks as well that go just fine with the seasons. 
 
But what is "Mote con huesillo?" 


 
This is a drink that is also considered a dessert that is prepared with "mote." This is a word that comes from the Quechua tongue that refers to all the grains and beans. So it basically means you are drinking something prepared with grains (in this case, just wheat) and that has a dried peach inside. The first time I prepared it I was completely shocked because of how easy it was. The name and the ingredients might scare people off, it doesn't sound traditionally delicious or easy to prepare. 
 
All you need to do is caramelize the sugar and add a bit of water and cinnamon. Then you add the mote and the peach. You heat the mix and you let it rest for a while before you put it inside the fridge to make it cold. 
 
It's a very thick drink, this is why you can also serve it as a dessert. If you are going through a very hot afternoon, this will help you to freshen up. It's great for summer days. If you happen to travel to Chile during the hot months, you will see tons of street vendors selling mote with huesillo. Please don't be scared of it and open your mind (and mouth) to a new experience, this drink will truly blow your mind with its sweet taste. 
 
Here is a fun fact: The largest mote con huesillo in Chile’s history was made on January 25, 2010. It totaled 665 liters, serving 1,500 thirsty and eager participants.


 
Ingredients:
  • 0,5 pounds of "huesillos" (peaches- you can also use prunes) 
  • 1 cup of sugar
  • 0.5 pounds of mote (wheat)
  • Cinnamon 
Preparation:
  • Clean the peaches and remove all the dirt from them. 
  • Boil about 1 liter of water. Pour the water into a bowl and let the peaches rest there overnight. Cover it, you don't want the heat running out. 
  • Now use the same water and boil it in a pot once again (with the peaches). Cook until it boils. 
  • Once it boils we add the cinnamon. This will give your drink that special color. 
  • Once the peaches start floating you will know they are ready. They will now look all wrinkled. Place them somewhere else to cool them down. 
  • While they are cooling down you prepare the mote. You put the mote in a pan and let it boil. Once it boils you turn off the heat and let it rest for about 2-3 minutes. Then you wait for the drink to cool down as well.
  • Now you serve the cool mote, the peach juice, and you finally incorporate the actual peaches (1 or two per drink).
