When I was a little girl I used to go to a beach club for the summer. I’m from Venezuela and we have some amazing beaches just around the corner.
My grandpa, or “abuelo” would raise me up very early in the morning and will sneak out of the apartment to go get some breakfast. It was fun because it was our little secret, our bonding time. But it was also delicious, the menu was ALWAYS the same. “Huevos pericos”, butter and bread.
For you readers that have not tried them yet, “huevos pericos” are the very latin and flavorful way to prepare scrambled eggs. You just need a bit of olive oil, a tomato, an onion and eggs.
If you want to prepare this at home this is all you must do… I promise it will be easy peasy:
Ingredientes:
For a two-person preparation
- 3 eggs
- 1 red and very ripe tomato
- 1 medium onion
- olive oil
- salt and freshly grounded black pepper
Preparation:
On your favorite pan (nonstick will do great) spread a bit of olive oil, when you see it bubbling add the onions and cook them until they are translucid (if you have patience you can wait a little bit more until the edges start to get a bit brown, that way you will caramelize them. Trust me, your patience will be rewarded) add the tomato and let it smush. Mix the eggs on a bowl and add the salt and pepper. If you like spice, then you can throw some chillies to the mix. Pour the egg batter and start doing the same movement you do to prepare scrambled.
You can serve this with bread or arepa (here is the recipe for that) and voilá!
Just heavenly.
