Bean Soup! A Delight For Cold Days

The weather is a bit rainy now in Venezuela and all I crave is a delicious and warm soup. This is a very popular Peruvian recipe that is tasty and soothing. This takes me immediately back to my childhood when my mom used to prepare it every time I felt a bit sick and cold. My family (and even my entire block) knew this dish as "sopota de fréjoles" (Big Bean Soup).
I remember that when I was little it was a true delight to watch my mom prepare it. There are many ways to do this, but I'm going to share my mother's recipe and preparation. I know you'll love it.
Let's not let the rain kill our vibe! Let's cheer up and prepare this soup that everybody loves.
Ingredients (for 6 servings)
- 1 cup of beans (preferably cooked)
- 200 grams of grated pumpkin
- 1 liter of water
- 4 slices of bacon thinly chopped
- 1/2 an onion chopped into small pieces
- 2 cloves of garlic thinly chopped
- 2 tablespoons of chili pepper powder
- 150 grams of noodles
- Salt, pepper, and oregano
Preparation
- In a big pot boil the water and the beans. It's important that you avoid using the salt at this point because it will prevent the beans from getting tender. Leave the salt for the end. Drain the water after they are ready.
- In a pan fry the bacon, the onion, the garlic, and add the chili powder when everything is golden.
- In the same pot add more water, the beans, the pumpkin, and the bacon and onions mix. Let it boil for about 10 minutes.
- Add the noodles, the salt, pepper, and oregano. Make sure the salt is right before turning off the heat.

Serve and enjoy hot!
