Pineapple Empanada, the sweet treat that will delight (or confuse) your palate

Hey, guys! Long time no see in this group! I have something under my sleeve that you will either hate or love. This recipe is not for all those pineapple haters who can’t stand it on pizza. But it’s pineapple season lately here, so let’s take advantage of that!
 
You see, the thing about pineapples is that they are the best! You can make juice, cocktails, food, or just cut, peel and eat. It’s also so refreshing and sweet (most of the times).
 
You’ve probably heard or read about the classical empanadas from Latin America, which are often filled with cheese, or meat, fish, among the most typical ingredients.




 
This sweet version of empanadas takes longer than the salty version, and a little bit more effort. But it is totally worth it, I can tell you.
 

Ingredients 

2 cups flour
2 1/2 teaspoons of baking powder
1 pinch of salt
250 grams of butter
1/2 cup of sweet cream to beat
1 teaspoon vanilla
4 egg yolks
4 tablespoons of sugar
1 cup of pineapple marmalade
Glass sugar to sprinkle (optional)


Preparation

  1. The first step is to sift the flour into a large bowl with the baking powder and salt. Form a hole in the center and add the butter, cream, vanilla, yolks, and sugar.
  2. Mix and work all the ingredients together until you have a manageable dough. Cover and let it stay in the refrigerator for at least 12 hours. 
  3. Divide the dough into two parts and spread with a rolling pin on a floured surface, until it is 1/2 centimeter thick. Cut the dough into slices, approximately 7 centimeters in diameter. 
  4. Fill each wheel with only 1/2 teaspoon of fruit jam (do not overfill them). Fold and seal the edges with a fork. Cover and refrigerate for 20 minutes. 
  5. Preheat the oven to 175 ºC. Lightly grease a baking tray. 
  6. Put the empanadas on the tray and bake until golden, between 15 and 20 minutes. You can sprinkle the warm empanadas with icing sugar if you desire.
 
And that is it. Eat your pineapple empanadas with whatever you like. I like them with some salty cheese on the side because I am fan of the sweet & salty combination. 

 



Remember that the dough must stay for 12 hours in the fridge, so be sure to have everything set before if you are planning on inviting friends over.
